Currant-Almond Rice Recipe by Ruth Paget
Serves 6
Ingredients:
-1/4 cup butter
-1/4 cup chopped onion
-1/4 cup chopped almonds
-1/4 cup chopped currants
-1 teaspoon salt
-2 teaspoons cinnamon
-4 cups cooked rice
Steps:
1-Melt butter in a Dutch oven. Add onion and cook for 10 minutes.
2-Add almonds and currants to butter and cook for 5 minutes. Add cinnamon and salt.
3-Add cooked rice to the Dutch oven. Stir mixture until the rice is steaming hot.
Serve with roast chicken, turkey, or lamb.
