Cantaloupe with Prosciutto Recipe by Ruth Paget 

Serves 4 

Ingredients: 

-1 cantaloupe peeled with seeds removed and cut into fourths 

-12 slices San Daniele ham 

Steps: 

1-Cut each cantaloupe quarter into 3 slices to make 12 slices total. 

2-Wrap each cantaloupe slice with a slice of San Daniele ham.  

Serve with a chilled, sweet white wine.

Serves 4 

Ingredients: 

-1 cantaloupe cut into fourths with seeds removed 

-1 cup sweet sherry or other sweet wine 

Steps: 

1-Scoop out a depression in the center of each cantaloupe fourth. 

2-Pour sherry into the depression of each cantaloupe fourth and serve.

Prosciutto and Cantaloupe Hors d’oeuvres by Ruth Paget

This recipe is an Italian favorite that I learned about in Giuliano Bugialli’s Foods of Italy many years ago.  You are supposed to wrap the prosciutto around slices of cantaloupe. 

Prosciutto clings to one another in packaging so that is harder than it sounds.  The ham from San Daniele Italy is easier to work with, but is harder to find.

Serves 4

Ingredients:

-1/2 seeded and sliced cantaloupe
-8 slices prosciutto or San Daniele ham

Steps:

1-Cut ½ cantaloupe in half to obtain two fourths of cantaloupe.  Then, cut the two fourths in half to get 8 slices.

2-Wrap prosciutto around cantaloupe slices.

3-Place a toothpick through the center of the prosciutto to hold the prosciutto in place.

This hors d’oeuvres tastes nice with a sweet white wine.

Chilled Cantaloupe Soup Recipe Created by Ruth Paget

A Prosecco or Chenin Blanc goes well with this soup, if you drink alcohol.  If not, iced herbal tea works.

You will need a food processor to make this recipe.

Serves 4

Ingredients:

-4 cups cantaloupe melon balls
-2 tablespoons honey
-3 cups apple juice
-1 cup chilled water

Steps:

1-Place cantaloupe balls, honey, apple juice, and water in the bowl of a food processor with the blade attachment.

2-Blitz until the soup is smooth.

Serve chilled.
