Everyday Paella Recipe by Ruth Paget
Yield: 4 large servings
Ingredients:
For sofrito flavoring sauce:
-3 tablespoons olive oil
-1 large chopped white onion
-2 chopped garlic cloves
-1 (20-ounce) can crushed tomatoes
-1 tablespoons paella seasoning of your choice
For rice:
-1½ cups brown rice
-1 (15-ounce) can drained sweet peas
-1 (14.5-ounce) can chicken broth
For garnish:
-2 Meyer lemons cut into quarters
Steps:
1-To make the basic sofrito flavoring sauce, heat olive oil in a paella pan. Add chopped onion and garlic and sauté them for 5 minutes.
2-For the second step in making the sofrito flavoring sauce, add the crushed tomatoes and paella seasoning to the onions and garlic. Sauté this mixture for 5 minutes.
3-At the end of 5 minutes, add the brown rice and stir it to fully coat it in the sofrito flavoring sauce. Lower the heat to medium and let the rice sauté for 5 minutes.
4-Next, add in the peas and chicken broth and stir. Bring this mixture to a boil and then lower the heat to a slow simmer and cover.
5-Let the rice simmer for 40 to 45 minutes or until the liquid has evaporated and the rice is tender.
6-Garnish with Meyer lemon quarters and serve.
Note: You can use 1 cup cooked shrimp instead of peas in this recipe, canned green beans, or canned black beans.
