Electric Fry Pan Pork Chops (or Chicken Breasts) Recipe Created by Ruth Paget

Electric Fry Pan Pork Chops or Chicken Breasts Recipe created by Ruth Paget

When I was growing up in Royal Oak, Michigan (a suburb of Detroit) in the 1970s, my mom taught me how to cook with an electric fry pan that you could set on a kitchen counter, plug in, and use like a pan on a stove burner to save energy and make clean up easier.

Our electric fry pan had a cover and could hold four pork chops or chicken breasts easily. The recipe below began as one in the electric fry pan operation manual that has morphed over the decades. It is a good fall market day recipe

I made these pork chops often when I was in college at the University of Chicago. (Chicago is world famous for pork belly trading and did sell pork chops very reasonably in stores, especially in fall.)   I used dry seasoning during Chicago winters.

Electric Fry Pan Pork Chops (or Chicken Breasts) with Vegetables (one-pot dish)

Serves 4

Ingredients:

-4 medium size pork chops

-2 tablespoons olive or vegetable oil

-1 cup rice

-2 cups chicken broth

-1 sliced onion

-1 sliced green pepper

-2 slices tomatoes with seeds

-1/2 tablespoon garlic salt

-1/2 tablespoon onion salt

-1/2 tablespoon paprika

-1/2 tablespoon celery salt (optional)

-1 tablespoon dry parsley

-salt and pepper, to taste

Steps:

1-Brown pork chops for 15 to 20 minutes in electric fry pan in oil.

2-Remove pork chops from fry pan. Add rice and chicken stock to fry pan. Place pork chops back in fry pan.

3-Place onions on top of pork chops. Place green pepper slices on top of onions. Place tomato slices on top of peppers and onions.

4-Sprinkle garlic salt, onion salt, paprika, and celery salt (if using) over the vegetables. Sprinkle parsley on top of vegetables.

5-Cover the fry pan and cook on high (400 degrees Fahrenheit) for 35 to 45 minutes.

6-All liquid should be absorbed by the rice with the pork chops left moist from braising. Salt and pepper, to taste.

Enjoy your one-pot pork chop dinner!

Wheat and Bread Knowledge for Personal Chefs by Ruth Paget

Wheat and Bread Knowledge for Personal Chefs by Ruth Paget

Ellen King, author and owner of Chicago’s Hewn Bread, explains what is driving the Heritage Baking Movement in the Midwestern US and her bakery’s role in it in her cookbook Heritage Baking ($1.99 on Amazon Kindle today 10-17-2026).

King generally describes Heritage Wheat as wheat grown in the United States before World War II.

She continues on to describe landrace wheat as a type of heritage wheat that is grown in a region for decades even hundreds of years.

Landrace wheat adapts to a region’s environment without need for chemical fertilizers and pesticides according to her. Landrace is a term that can apply to animals as well.

King also notes that heritage wheat differs from Biblical or ancient grains like einkorn, spelt, and emmer although these are used in the Midwest as well.

Wheat has two seasonal divisions: spring and winter, which refers to growing and harvesting seasons. Spring wheat is planted in spring and harvested in summer. Winter wheat is planted in fall and goes dormant in winter. In spring, winter wheat grows again and is harvested in summer.

Different varieties of spring and winter wheat have varying characteristics, which can be summarized as follows:

*Hard Red Winter (HRW)

-high protein

-high gluten

-best for bread and all-purpose flour

*Hard Red Spring (HRS)

-high protein

-high gluten

-best for use in bread and brioche

*Soft Red Winter (SRW)

-lower protein

-lower gluten

-best for pastries and all-purpose

*Soft Red Spring (SRS)

-lower protein

 -lower gluten

-best for blending with hard wheat to increase protein

*Soft White

-low protein

-low gluten

-best for non-bread recipes and pastry

King writes that home bakers can obtain great results baking by milling their own wheat berries into flour. She points out that the nutritive germ and endosperm of the wheat berry are coated by an equally nutritive bran.

Milling extracts these three items in different percentages. What you want to achieve is a high extraction value in milling, which indicates that large amounts of bran, germ, and endosperm have been retained in the flour.

Once you have your flour, King counsels readers to make a starter (also called a sourdough starter, levain, leaven, or a “mother”) that will be added as a natural wild yeast to additional flour, water, and salt in basic bread recipes.

When you have a good starter, you add this to your recipe ingredients and allow them to rise before kneading the dough. King provides step-by-step photos showing how to knead dough.

There are many bread recipes in Heritage Baking, but the four recipes that I have made that I think are good ones to begin baking with follow:

-basic bread loaf

-cheddar loaf (My Wisconsin family makes this with the addition of red pimiento peppers)

-cinnamon buns (I prefer to buy these, but they are a good activity to do on “snow days” when school is closed.)

-brioche (I made brioches in Stuttgart, Germany when I lived there, because one of my husband’s aunts worked as a bakery manager in Tours, France and was a master brioche baker.)

Ellen King’s Heritage Baking is a treasure trove of delicious and nutritious bread recipes and a go-to reference for wheat knowledge for personal chefs who want to expand their dish portfolios to offer clients.

Happy Baking!

Scent of Autumn in Monterey County California? By Ruth Paget

2026 Scent of Autumn Monterey County California by Ruth Paget

The air outside smells like burning leaves, twigs, and branches burning; a very traditional fall activity.

The ashes can be spread on soil as fertilizer if not too frequently. This is modified slash-and-burn fertilization that I saw in practice in Italy outside Florence on one of my rips there.

German Recipe Ideas for Personal Chefs by Ruth Paget

German Recipe Ideas for Personal Chefs by Ruth Paget

I have learned to really like German food after living in Madison (Wisconsin), which has many citizens with German ancestry and restaurants serving German food as well as spending several years in Stuttgart, Germany on overseas duty with the US military.

I found three German recipes in Gordon Ramsey’s cookbook Quick and Delicious: 100 Recipes to Cook in 30 Minutes or Less that I would consider purchasing from a personal chef experienced in making German specialty dishes:

p.102 – pork schnitzel with celeriac (celery root) remoulade

p.110 – juniper venison steaks with quick braised red cabbage

p.126 – roast pork chops with crushed new potatoes and lettue

Gordon Ramsey includes recipes from around the world in Quick and Delicious, making it a good reference for building an international dish portfolio for personal chefs.

Quick Baking Muffin Ideas for Personal Chefs by Ruth Paget

Quick Baking Muffin Ideas for Personal Chefs by Ruth Paget

When I was a teenager in Detroit (Michigan), I helped my divorced mom who worked 40+ hours a week as a printer at the Detroit Free Press newspaper prepare meals for the upcoming school week.

I baked muffins (quick breads and loaves made into muffins) and made fruit salads that I would eat with slices of cheddar or Swiss cheese and two pots of Canadian Red Rose tea. (Red Rose tea is strong and bitter – just the way I like it.)

The cookbooks I baked from in Detroit were usually Betty Crocker’s (corporate written and tested for no-surprise results).

I recently purchased Betty Crocker’s Big Book of Bread ($1.99 on Amazon Kindle) to have recipes for my favorite quick breads at my fingertips again.

The Betty Crocker Big Book of Bread writes that quick breads are leavened (made to rise when baking) by using baking powder. Quick breads can be baked as soon as they are mixed unlike yeast breads as well. Quick breads should no be over mixed or they will turn out tough and poorly risen according to Betty Crocker. (More details can be found in the book.)

I ate savory and slightly sweet muffins. I made banana bread loaves into muffins. I reduced sugar by 1/2 to 1/3.

Some of the muffins that I liked are still what I consider easy to prepare and might appeal to personal chefs as well.

These recipes include:

-bean muffins

-pumpkin muffins (made with pumpkin purée)

-buttermilk muffins

-savory corn bread muffins

-banana bread

-sour-cream cranberry muffins

-zucchini bread muffins

-carrot bread muffins

-oatmeal muffins (I added rehydrated raisins to mine.)

-Irish yogurt bread muffins

What I liked about these quick breads is that they really are quick; it takes about 35 minutes to bake most of them with 15 minutes of time to prepare.

Busy working people could probably make these quick bread muffins while doing laundry. (This is what I did in high school.)

Personal chefs can easily incorporate a variety of muffins into their recipe portfolio that have a good profit margin.

Happy Baking!

The Infinite Game $ Score Sheet reposted by Ruth Paget

I saw The Infinite Game advertised on Amazon recently and thought of little game to do using a small daily calendar.

In this calendar you note $+ or $- for money saved during the day and money spent during the day.

At the end of each month, you total what you saved and spent and then do this for the year.

This information lets you see where you are losing money that you could be saving instead.

The Infinite Game book information follows for interested readers:

Electric Egg Cooker reposted by Ruth Paget

When I lived in Stuttgart (Germany), I used an electric egg cooker to make hard-boiled egg slices to go on salads with smoked salmon slices.  I loved eating that salad in winter.

Electrical egg cookers use very little water.  They steam eggs and can cook them to varying degrees of doneness that you select before turning the cooker on.

If you eat and like boiled eggs, an electric egg cooker like the following one might be of interest to you:

https://www.amazon.com/Evoloop-Electric-Capacity-Poached-Vegetable/dp/B0FR42143T/ref=mp_s_a_1_1?crid=2FMNEZFHAY2M0&dib=eyJ2IjoiMSJ9.lxrLLo0p65ozzk_Z6xlG8RAdPq1xyKX8rR3aWCW3gSGN7mtQRyhQhHIs4-ecP1J8kGwbPipCn_wdxNErpoCL4HJ1nBzrlPrh1S_fHXZfQvYDJJWmP6stpiXIGswnBCNIHreKFGOJYde5P4X07bWaFqJRKOCwKsDdpyLOnlHRV6FeDhC4qUEPwQE10Slu6JyB5qCXSBrgsnTNSA2-mCucoA.Uy1Ei5EuKL4r17bmrg-mGPSNsKuavNZgS_nh6hnHRvU&dib_tag=se&keywords=electric+egg+cooker+mueller&qid=1791639674&sprefix=electric+egg+cooker+mueller%2Caps%2C221&sr=8-1

The $39 price today (10-10-2026) is very affordable.

Starbucks Cocoa by Ruth Paget

Hot Cocoa for Fundraising by Ruth Paget

I learned when doing high school bake sale fundraisers in Detroit, Michigan that you can make rich cocoa like Starbucks with just water.

Chocolate has some antioxidants and can fill you up with a pastry.

The club sponsors bought the first batch of hot cocoa.  The clubs paid them back from profits and had enough money to buy cocoa after the first sale to be self-sustaining.

I like Starbucks cocoa and have provided a link for it to give an idea for budgeting and bake sale item pricing:

Fall Country Field Trips from Suburban Detroit, Michigan by Ruth Paget

Fall Country Field Trips from Suburban Detroit, Michigan by Ruth Paget

Crisp, fall breezes in Royal Oak, Michigan (a suburb of Detroit where I lived as a young teen) meant field trips to the countryside where city kids could learn about country traditions like harvest that were important to Michigan’s economy like car production.

We would head out toward Western Michigan and go to teaching farms to do country lifestyle activities such as:

-toss hay

-feed smelly pigs

-feed pecking hens

-pet goats who liked carrots

-pet horses

-milk cows

 -learn how tractors plowed

-go on a hayride and throw hay at each other before heading home

Another fall field trip we would always go on was the annual cider mill and donut outing. Warm, plain donuts taste great eaten outdoors with friends.

Once those field trips were done, we would go to the Henry Ford Village in Dearborn (Michigan) to see colonial craftsman make horseshoes, candles, and rope. The buildings were restored colonial buildings and there was a museum with Revere Ware silver made by “the real Paul Revere.”

For science, we piled into school buses to visit Cranbrook Institute of Science in Bloomfield Hills (Michigan) to watch the night sky spin above us in the planetarium where we learned key knowledge like:

-ancient Greek myths live on in the names of constellations in Western astronomy

-the planet Venus burns bright and can help orient you without a compass

-once you locate the Big Dipper, you can find all other constellations – another orientations tool

-the Northern and Southern Hemispheres have different constellations

Other fall outings usually done with church youth groups included walking tours of Holland (Michigan) built to resemble The Netherlands and Frankenmuth (Michigan) built to resemble Bavaria, Germany followed by light lunches in church halls.

I continued my “field trips” with trips to the school library and took out books about different states and biographies of famous Americans. I still think it is easier to retain historical facts if you learn about them through the life of a person.

These field trips taught me that using a state’s history and geography are excellent resources for learning about local communities for the young and adults alike.

Fashion District Family Outing in Carmel, California by Ruth Paget

Fashion District Family Outing in Carmel, California by Ruth Paget

My husband Laurent and I went out for a fashion district family outing in Carmel, California.

We started out at the Lafayette Bakery in the Barnyard Shopping Center. I drank a strong Costa Rican coffee with cream ($3.50) while Laurent bought two baguettes ($5 each). I consider those prices to be very reasonable for high quality products.

The restaurant above Lafayette is available for lease.  A focaccia restaurant and wine bar (emotes style) might be nice there for after shopping light meals.

The Barnyard offers nice clothing stores, home décor, and lovely restaurants like Lugano for Swiss food, Robata for Japanese food, and Bagel Bakery for cool New York charm.

The Crossroads Shopping Center is located next to the Barnyard, which has many consignment shops with designer clothing deals and shops run by local charities with fashion and home décor featuring unique finds at affordable prices. You can teach young people a lot about fashion by evaluating finds in stores like the ones in the Crossroads.

(Ocean Drive in Carmel-by-the-Sea has upscale shops like Tiffany and Kate Spade and Burberry’s for pricier purchases.)

The Palo Corona Regional Park is located right behind these malls on Carmel Valley Road. The Park features the Palo Corona Discovery Center, which documents the ecosystems the park is conserving. (Open Friday – Sunday) Combining a fashion stroll with an educational outing is a nice way to learn two things at once.

For fall home décor, families can buy miniature pumpkins at Earthbound Farms just down the road in Carmel Valley or drive over the Laureles Grade like we did to visit the Farm.

We stopped at The Farm outside Salinas. Several schools from Salinas were on field trips to learn about sustainable organic farming and eat a picnic lunch in the countryside. I always liked fall field trips to the farm as a student in Detroit (Michigan), which always included a trip to a cider mill for a snack with donuts.

At home, I read The Sandpiper, the Carmel High School student newspaper we picked up at The Barnyard. I read through it and liked:

-the advertisements

-the coverage of the Model United Nations Club

-the coverage about three Carmel students who showed films at the Carmel International Film Festival

-the coverage about the film appreciation club, where students learn to critique films as well as watch them.

I thought these student clubs at Carmel High School were very fashionable.

All in all, this was another nice vacation day that is a short drive from Salinas, California to Carmel’s fashion district.

French Mushroom Recipe Ideas for Personal Chefs by Ruth Paget

French Mushroom Recipe Ideas for Personal Chefs by Ruth Paget

I read The Mushroom Feast by Jane Grigson as a follow-up to my Wisconsin 2026 Dairyland Vacation. In addition to many cows, Wisconsin has many trees in its Northwoods that provide a perfect growing environment for mushrooms.

Mushrooms can also be found in the Santa Lucia Ridge in Monterey County providing local personal chefs with the raw materials to make easy and versatile sauces that go with many recipes.

Jane Grigson’s The Mushroom Feast (423 pages) contains many French recipes thanks to Grigson spending summer vacations in the Loire River region above Tours. (The Mushroom Feast is selling for .50 cents on Zkindle today - 10-2-2026)

Two of Grigson’s mushroom sauces can be used in many kinds of recipes. The first sauce I called a Duxelles Sauce, which I have made many times to serve with T-bone steaks and mashed potatoes.

This sauce is made with mushrooms (or stems and trimmings to be no-food waste), butter, oil, shallots or small onions, and flat leaf parsley that is sautéed together.

Grigson writes that Duxelles Sauce can be placed under a whole baked fish that is to be baked. She also writes that Duxelles Sauce can be mixed with béchamel sauce (butter, flour, and milk that is cooked till creamy) to stuff tomatoes or large mushrooms for baking.

The second very versatile sauce Grigson writes about is a Sauce Suprême used with poultry and fine fish. Sauce Suprême is made with béchamel sauce (butter, flour, and stock used instead of milk), mushrooms, and double cream. These items are cooked together with egg yolks added at the end to thicken the sauce.

The Duxelles Sauce and Sauce Suprême can be used with mashed potatoes and over toast for tasty snacks as well.

Mushrooms contain many nutrients that make them a very good vegetable to eat such as:

-Vitamins B2, B3, and B5

-Vitamin D

-Potassium

-Copper

-Selenium (helps support thyroid health)

-antioxidants

Jane Grigson’s The Mushroom Fest provides many mushroom recipes that provide great flavor and nutritional value that personal chefs can add to their product portfolio with a minimum outlay of money and time.

Happy Cooking!

A nice and inexpensive winter salad can be made with the following ingredients:

-mandarins

-apples

-pears

-bananas

-raisins that have been rehydrated in hot water or tea

-shredded coconut (optional)

-lemon juice

I call this salad a cold fighter.
