My daughter Florence Paget made roast chicken with onions, shallots, garlic, and chives and filmed and edited the process as well.
Nice job using butcher’s roasting twine to tie up the legs on the chicken. .

It browned beautifully while baking and was very juicy even the white meat. Florence served scalloped potatoes with the roast chicken.
